- 5 Roma tomatoes, diced
- 2 cloves garlic, minced
- 1 medium jar of artichoke hearts, drained and diced
- 2 cups spinach, chopped
- 3 tablespoons olive oil
- 2 tablespoons flour
- 4 large boneless skinless chicken breasts
- 1 1/2 cups mozzarella
- 1/2 cup parmesan
- Salt & black pepper, to taste
- 2 tablespoons fresh basil
DirectionsPreheat oven to 350 degrees F. Combine tomatoes, garlic, artichokes, spinach, olive oil, flour and 1 tablespoon basil in a small bowl. Place chicken in a large casserole-style baking dish (one layer). Season with salt and pepper. Pour in tomato/artichoke/spinach mixture and spread evenly across dish. Bake in oven for 25-30 minutes or until *almost* done.
Remove from oven, and top with cheese and remaining basil. Replace in oven and bake for 5-10 minutes. Broil for 1-2 additional minutes so cheese is slightly browned. Serve and enjoy!
