Butterscotch Pie

  • 1 cup brown sugar
  • 4 tbsp. cornstarch
  • 1/2 tsp. salt
  • 2 cups milk
  • 2 egg yolks, beaten
  • 1 tbsp. butter
  • 1 tsp. vanilla
  • 1 (9 inch) pie crust, baked
  • optional: butterscotch chips


Combine brown sugar, cornstarch, salt, and milk in pot on stovetop. Cook on medium heat and stir constantly until it thickens.

Mix in egg yolks; stir, and continue cooking until thickened.

Remove from heat. Add butter and vanilla, then stir again.

Pour into cooked pie crust. Bake at 400 degrees for 5 minutes or until brown.

Top with butterscotch chips if you choose.
