- 1 cup brown sugar
- 4 tbsp. cornstarch
- 1/2 tsp. salt
- 2 cups milk
- 2 egg yolks, beaten
- 1 tbsp. butter
- 1 tsp. vanilla
- 1 (9 inch) pie crust, baked
- optional: butterscotch chips
DirectionsCombine brown sugar, cornstarch, salt, and milk in pot on stovetop. Cook on medium heat and stir constantly until it thickens.
Mix in egg yolks; stir, and continue cooking until thickened.
Remove from heat. Add butter and vanilla, then stir again.
Pour into cooked pie crust. Bake at 400 degrees for 5 minutes or until brown.
Top with butterscotch chips if you choose.
