Chicken Chili with Pesto

Ingredients

  • 2 tsp. oil
  • 3/4 c. chopped onion
  • 2 c. boneless cooked chopped chicken breast
  • 1 1/2 c chopped carrot
  • 3/4 c. chopped red pepper
  • 3/4 c. thinly sliced celery
  • 1/4 c. chopped green chilies
  • 3/4 tsp. dried oregano
  • 1/2 tsp. cumin
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 1 16oz can cannellini beans, rinsed and drained
  • 1 14 1/2 oz can chicken broth
  • 3 Tab. jarred pesto

Directions

Heat oil in a Dutch overn over medium heat. Add onion, carrot, red pepper, and celery and saute for 4-5 minutes. Add chicken and the next 6 ingredients (chiles through broth). Bring to a boil. Cover. Reduce heat and simmer for 25 minutes. Stir in pesto.
