This is a great meatless dish and can be easily made with items from your pantry! It’s also quick and easy to make! Try using whole-grain pasta to kick up the healthy factor!
2 10 ¾ oz cans of lentil soup
1 14 ½ oz can of diced tomatoes
1 15 oz can of tomato sauce
1 small onion, diced
2 cloves of garlic, minced
2 tablespoons olive oil
1 pound cooked spaghetti
In a large skillet with deep sides, sauté onions in olive oil over medium heat until translucent (about 5 minutes). Add garlic and sauté for 1 minute more. Add lentil soup, diced, tomatoes and tomato sauce and simmer for 20 minutes. Serve over pasta and top with grated parmesan cheese.
