Jalapeno Cornbread

Ingredients

  • 2 boxes Jiffy Corn Bread Muffin Mix
  • 2 C. grated cheddar cheese
  • 1 15 oz. can cream style corn
  • 2 C. sour cream
  • 2/3 C. oil
  • 1 medium onion chopped
  • 4 eggs beaten
  • 1/4 C. chopped jalapenos or more to taste

Directions

Preheat oven to 350 degrees. Use 325 degrees if using a glass baking
dish.

Combine all ingredients in a large mixing bowl and mix well. Pour into a
13x9 pan and bake for 1 1/2 - 2 hours. Check after baking for about an hour. If necessary, cover edges with foil to prevent over browning along sides of dish. Use toothpick in center to test for doneness.
