A hearty vegetable beef stew, cooked slow for perfection.
- 2 lbs beef stew meat
- 2 lbs frozen or fresh mixed vegetables (green beans, peas, carrots, corn)
- 2 large Idaho potatoes
- 8 cups (64 oz) beef broth
- 2 Tsp onion powder -or- 1/4 cup chopped onion
- salt/pepper to taste
DirectionsChop potatoes into 1-inch or smaller pieces. Place chopped potatoes on bottom of crockpot. Put mixed vegetables on top of potatoes in crockpot. Cut beef stew meat into 1-inch or smaller pieces; place on top of mixed vegetables and potatoes already in crockpot. Sprinkle onion powder, salt, and pepper on top of meat. Pour 8 cups of beef broth on top of items already placed in crockpot. Cover and cook on low for 8 to 12 hours; or until done. Stir mixture together after about 6 or 7 hours. Stir more frequently closer to serving.
Makes about 5 1/2 quarts of stew.
