Roasted Vegetables with Fennel

Ingredients

2 bulbs fennel, sliced
1 aubergine, cubed largely
1/2 red bell pepper, cut into large squares
1/2 green bell pepper, cut into large squares
1 onion, quartered 
2 large garlic cloves, thinly sliced
Assorted dried herbs
Salt and pepper
2 tbsp olive oil

Directions

Mix everything together then roast in the oven at 425 F for 30-35 minutes, stirring half way.
