Red Curry Shrimp

Ingredients

  • 1/2 lb. fresh uncooked shrimp, shelled and deveined
  • 1 can (14 fl. oz.) coconut milk
  • 1/3 cup water
  • 1/2 cup frozen peas or other vegetable
  • 1/2-1 Tbsp. red curry paste
  • 1-2 Tbsp. fish sauce
  • 2 Tbsp. brown sugar

Directions

In a large saucepan simmer coconut milk and red curry paste over medium heat for 5 minutes.

Add fish sauce, brown sugar, water, and frozen peas. Simmer 10 minutes stirring occasionally.

Stir in fresh shrimp and continue cooking 3 to 5 minutes or until shrimp are cooked.

Serve with jasmine rice.
