Caprese Chicken with Bacon

  • 8 bacon strips
  • 2 tomatoes, sliced
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 6 fresh basil leaves, thinly sliced
  • 1/3 teaspoon salt & pepper
  • 4 slices mozzarella cheese


Place chicken in an ungreased 13x9” baking pan; brush with oil and sprinkle with salt & pepper. Top with tomatoes and basil; then wrap each in two bacon strips, arranging bacon in a crisscross. Bake uncovered at 400 degrees for 30-35 minutes, or until a meat thermometer reads 165. Top with cheese and bake a couple of minutes longer until it is melted.
