Ingredients
- 1/2 cup ranch dressing
- 1/2 cup shredded cheese
- 1/4 cup bacon bits or chopped cooked bacon
- 2 - 3 lbs small potatoes, cut into 3/4” chunks
- 1 tbsp chopped fresh parsley
- pinch each of salt & pepper
Directions
Preheat oven to 375. Mix dressing, cheese, and bacon bits in large bowl. Add potatoes and toss lightly. Pour mixture into a lightly greased 13x9” baking dish; cover with foil. Bake for 40 minutes. Remove foil & stir once; bake an additional 14 minutes or until potatoes are tender. Mix in the parsley just before serving.
