Parmesan Roasted Potatoes

Ingredients

  • 2 lbs red potatoes, unpeeled and cut into 1" chunks
  • 3 tablespoons extra virgin olive oil
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 cup grated parmesan
  • 8 sprigs fresh thyme OR 3 teaspoons italian seasoning

Directions

Combine all ingredients in a bowl. Transfer into a greased 9x13" dish. Bake at 350 for an hour, stirring once, until golden brown and crisp.
