- 1 box farfalle pasta
- 1 1/4 pounds of tomatoes on the vine
- 4 Tbsp. extra virgin olive oil
- 1/2 cup onions, diced
- Salt and black pepper to taste
- 6 basil leaves, torn
DirectionsBring 2 large pots of water to a boil.
Place tomatoes in boiling water for about 30 seconds, then quickly plunge them into an ice bath to stop the cooking process. Remove skin and seeds and cut into segments.
In a large skillet, heat olive oil and saute onions over medium heat for 4-5 minutes.
Add tomatoes, season with salt and pepper and saute an additional 4 minutes.
Cook pasta according to package directions.
Drain, toss with tomatoes and basil, then serve.
