- 3/4 cup butter, room temperature
- 1/2 cup light brown sugar
- 1/2 cup granulated white sugar
- 1 large egg
- 1 tsp. pure vanilla extract
- 3/4 cup crunchy peanut butter
- 2 cups all-purpose flour
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 cup chocolate chips
DirectionsPreheat oven to 350 degrees and place rack in center of oven.
In a medium bowl beat butter and sugars until lightly fluffy (2-3 minutes). Beat in peanut butter. Add egg and vanilla extract and beat to combine. In a small bowl whisk together flour, baking soda, and salt. Add flour mixture to peanut butter mixture gradually and beat until incorporated. Fold in chocolate chips. If batter is too soft to form place in refrigerator for an hour.
Roll the batter into 1-inch balls. Place on cookie sheed about 2 inches apart. Using a fork, press criss-cross pattern into each ball. Sprinkle with granulated white sugar.
Bake cookies for 12 - 14 minutes or until the cookies are lightly browned around the edges. Remove from oven and place on a wire rack to cool.
