Creamy Beef Enchiladas

Ingredients

Filling:
1 small yellow oniom
1 bell pepper
2 serrono peppers
pulse these first then add 1 pound lean ground beef browned and drained
8 oz softened cream cheese
8 oz sour cream
1 cup salsa
1 1/2 cup mexican blend shredded cheese
salt and pepper to taste

Topping:
1 cup velveetta cubed

Directions

Filling:
Mix if food processor.

Topping:
Microwave in bowl stiring ccasionally til all the cheese is melted. Pour cheese sauce over all enchiladas.

Enchiladas:
Fill one package flour torillias with filling, line up in a glass cassarole dish. Cover with foil and bake at 350º for one hour, remove foil and let rest 15 minutes before serving.
