A sweet, diverse and satisfying muffin that's perfect for breakfast, dessert or snack.
- 1/2 cup salted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 3 overripe bananas
- 1 1/2 cups all-purpose flour
- 1 Tbsp. baking powder
- 1 8 oz. package toffee bits (1 1/3 cups)
DirectionsPreheat oven to 350 degrees. Line muffin slots with muffin liners.
In a large mixing bowl, blend together the butter and sugar with a hand mixer (or do it in your stand mixer) until light and fluffy (about 2 minutes). Add eggs and blend until well combined. Add the bananas and blend again.
Add the flour and baking powder to the mixing bowl, Mix on low speed until just combined. Add the toffee bits and blend to combine.
Fill muffin cups to 3/4 of the way with batter.
Bake for about 15 minutes, until golden. Serve immediately. Leftovers can be stored in an airtight container for up to 4 days.
