Lemony Eggplant

Ingredients

  • 2 cups peeled eggplant, diced into 1/4 in pieces
  • 2 cups lemon juice
  • 2 cups sugar

Directions

Combine the lemon juice and sugar in a sauce pan.

Bring to a simmer, then reduce heat to low.

Add eggplant, cook until translucent and soft to the touch.
